Quinoa & Burrata Salad

As I’m writing these words, I’m currently waiting for my quinoa to cook so I can have this delicious salad for lunch again! I originally tried this in a restaurant and tried to recreate it at home except that it had courgettes in it as well, but I already eat so many courgettes during the week that I skipped it. This salad is perfect for Spring/Summer and as I see the sun finally peeking, I believe it’s the perfect occasion to share it! Serves 1.

We all know breakfast is the best meal of the day, right? Well, I’m a sucker for a slice of bread topped with salted butter and a cup of tea! Cod + Zucchini Noodles

I’ve always cooked during the week, more or less elaborated meals, but it seems I’m on a roll these days, having made brioche last weekend, this dish on Monday night, and tomato sauce for an eggplant tart on Tuesday night. I’m loving it and I’m even looking at blenders right now to potentially get one! So it seems there will be a lot of cooking involved in 2018, and I’m excited about it! As I’m cooking for one, these « measurements » go for a party of one kind of dish, but you can of course double them if needed.
